Rubbed down with coffee and spices and then slowly cooked on a grill or in the oven these ribs are fall off the bone finger licking good and everyone here loves them !
What you need
- 2 slabs of Baby Back Ribs
- a bit of olive oil
1/2 tablespoons brown sugar
1/2 tablespoon freshly ground black pepper
1 tablespoon salt
1/2 tablespoon red chilli pepper flakes
1/2 tablespoon coffee grounds ( I think espresso grounds work the best since they are finer but any coffee will do).
1/2 tablespoon granulated garlic
1/2 tablespoon paprika
This is amazing on the grill but the heat should be indirect. To do so you have your charcoal on one side and cook on the other and it should be a low heat. No more then 250 degrees. No worries though if you don’t have a grill. The oven will work just fine.
Set your temp to 225 – 250 degrees
Mix your dry rub together in a bowl. ( I always mix a bunch at once and store it in an air tight container. Its great on lots of stuff )
Rub your ribs down with the olive oil on both sides then sprinkle on the dry rub and pat it onto the meat well..
Roast on 225 – 250 degrees for 4 to 5 hours turning once in the middle. They will be tender, juicy and amazingly good. In fact these are so good that the husband will happily drive to the meat market and stand in line ( Its usually 30 min. to an hour ) just for 4 or more packages of baby back ribs to put in the freezer so we have them on hand.
